Chef JOHN GORHAM and GARRETT PECK, alongside with Aborígens are happy to announce a new trip together that will take us to the hidden corners of Catalonia and the Basque Country. After many previous successful trips that brought us to some of the most amazing food and wine temples of the Balearic Islands, Andalusia, and Galicia, this time we will explore what are broadly regarded as the most exciting food destinations of the Iberian Peninsula, where culinary tradition is in endless conversation with cutting-edge creative cuisine.

A small group of lucky travelers, together with John and his crew and a local insider guide from Aborígens, will start this journey in BARCELONA, a lively city with an ancient culinary tradition as well as a vibrant contemporary food scene. After some urban and countryside exploration, we will fly to SAN SEBASTIÁN, the “pearl” of the Cantabrian Sea, where the beauty of its bay shouldn’t blind us to the culinary treasures that await: a rich local cuisine, amazing seafood, wine and fresh cider, artisan cheeses, and many other delights. And on top of that—its people.

John Gorham, co-owner and Executive Chef of Portland’s iconic Toro Bravo, joined forces with Garrett Peck a few years ago to launch a new culinary venture: RBC. Standing for Rancher Butcher Chef, RBC is a modern steakhouse located in Bend’s Northwest Crossing neighborhood, built around a deep respect for quality ingredients and the people who produce them. At RBC, Gorham and Peck work closely with local ranchers and farmers who share their commitment to sustainability, responsible land stewardship, and exceptional sourcing. This philosophy has resonated strongly with the community, earning RBC the title of “Restaurant of the Year” from Bend’s local newspaper, The Source, for two consecutive years. Together, they also operate BAR RBC, a vibrant tapas, wine, and cocktail lounge in the heart of downtown Bend. As Gorham himself explains, his culinary style is shaped by “a trade route composed of travels, past work, cities lived in, and the foods my family made growing up” a philosophy that continues to inspire the restaurant’s distinctive approach to modern American cuisine.
